Leftover Linda McCartney’s Vegetarian Chicken Roast sandwich


Linda McCartney leftover chicken roast
2 Slices thick cut farmhouse bread
1 Avocado
2 Tomatoes
100g Lettuce
1tbsp Cranberry sauce


  1. Slice the leftover pre-cooked Linda McCartney roast chicken
  2. Cut slices of avocado and tomatoes
  3. Take 2 slices of bread and cover 1 slice in cranberry sauce
  4. Rip some leaves of iceberg lettuce and assemble onto the slice with cranberry sauce
  5. Layer some tomatoes and avocado
  6. Lastly, layer your thinly sliced leftover chicken on top. Top the other slice of bread and enjoy!
