Simple ingredients are enhanced by the piquant Sicilian flavours of this salad. Why not serve this exciting salad on the side of our Linda McCartney’s Sweet Potato Kievs.
Recipe by Linda McCartney (Linda McCartney On Tour from 1998)
In a medium saucepan cook the potatoes in boiling water until tender. Allow to cool slightly and cut in half. Mix the potatoes, beans, onion, black olives and capers in a large bowl. Pour sufficient vinaigrette over the salad to moisten and toss well. Sprinkle with parsley and serve.
450g new potatoes, unpeeled
450g French beans, steamed and cut into 2.5cm lengths
225g cooked or tinned haricot or cannellini beans
1 small red onion, chopped finely
50g black olives, pitted and sliced
1-2tbs capers
Classic Vinaigrette
Freshly copped parsley to garnish
