We think our Linda McCartney’s Vegetarian Mozzarella Burgers go perfectly with this recipe. Serve hot with rice, pasta or potatoes and a green salad.

Pre-heat the over to 180c. Heat the oil in a frying pan and brown the Vegetarian Mozzarella Burgers on both sides, about 5 minutes in total. Then remove them from the pan and put to one side. Sauté the onion and garlic in the hot oil until tender, then add the tomatoes, oregano and seasoning. Simmer for 15 minutes to thicken. Put the Vegetarian Mozzarella Burgers in a casserole dish. Place the olives on top and pour the sauce over them. Cover with slices of mozzarella and bake for 30 minutes.

6 Linda McCartney’s Vegetarian Mozzarella Burgers
1 large onion, chopped
2 cloves garlic, crushed
2 400g cans chopped tomatoes
1tbs freshly chopped oregano or basil
Salt and freshly ground black pepper to taste
16 black olives, pitted and chopped
1 cup mozzarella cheese, sliced
