This delicious meat free chilli is easy to throw together using mostly store cupboard ingredients, perfect for a tasty mid week meal the whole family will love.
2 tbsp sunflower or vegetable oil
1 large medium onion, chopped
2 cloves of garlic, crushed
1/2 courgette, chopped
1/2 red or yellow pepper, deseeded and chopped
225g Linda McCartney Foods Vegemince
2 x 400g chopped tomatoes
1 tbsp tomato puree
1 tsp mild chilli powder (to taste)
1 tsp paprika
1 tsp cumin
1 x 400g tin kidney beans, rinsed and drained
Fresh coriander or parsley, chopped
Freshly ground black pepper
