A classic bircher muesli with some added extras such as crunchy pumpkin seeds, dried fruit and a little spice, together with some non-dairy yoghurt and milk, makes a yummy and nutritious breakfast. Allow for soaking time when making this – at least three hours or overnight, ready for a delicious breakfast the next day.
In a large bowl, mix together all the ingredients except the nuts and fresh fruit. Divide the mixture between 4 large jam jars or containers, cover and leave to soak for at least 3 hours or preferably overnight in the fridge.
Serve with the hazelnuts scattered over and fruit of your choice.
150g rolled oats (preferably jumbo)
1 apple, cored and grated
150ml unsweetened plantbased milk of your choice
150ml fresh orange or apple juice
40g dried fruit, such as raisins, cranberries or apricots, plus extra to serve
40g pumpkin seeds
1 tsp ground cinnamon
200g non-dairy yoghurt
To serve
40g roasted blanched hazelnuts (or other nuts of your choice)
