Evenings are getting lighter, the weather’s warming up and the sun has come out of hiding. It’s spring!

This season brings a host of fresh British veggies – purple sprouting broccoli, watercress, asparagus, Jersey Royal new potatoes – all at their very best right now. We’ve put together a few of our favourite spring side dishes to give you some ideas.

These recipes can be eaten hot as a dinner side or cooled and refrigerated for a fab packed lunch or picnic. We love them piled high alongside our Vegetarian Cheese and Leek Plaits for a quick spring lunch or supper.

Seasonal Sides

Purple Sprouting Broccoli with Feta and Lemon

Heat a heavy pan until nice and hot with a splash of oil. Add the broccoli and cover for a few minutes so it steams in its own juices. Stir and re-cover, cooking for a further minute or two. Uncover, crumble over some creamy feta, squeeze over a little lemon juice and season to taste with salt and plenty of black pepper. 

Asparagus with Garlic and Mint

Heat a heavy pan until nice and hot with a splash of oil. Add the asparagus and cover for a few minutes so it steams in its own juices. Uncover, add a little crushed garlic and stir. Re-cover, cooking for a further minute or two. Tear over a handful of fresh mint leaves, scrape in the zest of half a lemon and season to taste with salt and plenty of black pepper.

Jersey Royals with Watercress

Either roast or boil some Jersey Royals (roasting is tastier, but takes longer) until tender in the centre. Tear watercress into bite-sized pieces and toss with the hot potatoes – it will wilt slightly. Melt over a good knob of butter and season to taste with salt and plenty of black pepper.
